This early and substantial 512-page cookbook, New Great Complete Cooking and Pastry, is one of the few surviving works attributed to him and is a valuable piece of Greek gastronomic history.
The book presents a comprehensive collection of recipes, accompanied by illustrations, covering both traditional and refined dishes. The author claims to be a “scientist cook,” emphasizing recipes that are not only delicious but also easy to digest and suitable for everyday people—not only for royalty.
To ensure quality and accuracy, the publisher enlisted Antonios Kallivokas (1855-1910), hygienist and professor at the University of Athens, to supervise the edition—an unusual and noteworthy step for a cookbook of this era.
